Spring flavours can be enjoyed all year round with this easy, light and fresh meal. The sweet glaze on the salmon and crispness of the salad act as a perfect accompaniment to our Nice & Dry Organic Cider.
What you’ll need:
- 200g of salmon, cut into two pieces
- 1 tsp of liquid honey
- ¼ tsp each salt and pepper
- 2 tbsp olive oil
- 3 cups mache lettuce (or any spring mix)
- ¼ cup fresh peas
- 3 radishes, thinly sliced
- 1 tsp lemon juice
- 1 tsp grainy mustard
Heat a non-stick pan on medium heat. Coat with olive oil. Place seasoned salmon and cook side 1 for 3-4 minutes. Flip, brush with liquid honey and cook remaining side for 2-3 minutes. Set aside.
In a large bowl, mix together olive oil, grainy mustard, lemon juice salt and pepper until combined. Toss in mache lettuce, peas and radish pieces, making sure to coat with the dressing.
Plate and serve immediately.
