Turkey Meatball Sliders with Cranberry Cider

Turkey Meatball Sliders
Makes 18
- 450g ground turkey
- 1 egg
- ¼ cup fresh breadcrumbs
- ¼ cup finely chopped fresh parsley
- Pinch each salt and pepper
- 1 cup fresh baby spinach
- 1/2 cup cranberry sauce
- 18 slider buns
In bowl, combine turkey, egg, breadcrumbs, parsley, salt and pepper. Roll into 18 meatballs (about 2 tbsp per meatball) Place on parchment paper-lined baking sheet, pressing to flatten slightly. Bake in 400°F oven until entirely cooked through, about 20 minutes.
To build sliders, place baby spinach on bottom half of bun and spread 1 heaping teaspoon of cranberry sauce on the top half. Sandwich meatball between both halves.
